Acerola is a known for its high content of vitamin C. What is less known is that the green acerola (less mature than red) has 2-3 times more vitamin! According to a study conducted by a group of researchers, green acerola contains more pectin and vitamin C: "The results showed that the highest content of pectin and vitamin C is produced in immature green stage 2424 mg / 100 g pulp and decreases with maturation of the fruit."
